Ingredients:
2 TB Olive Oil
1 (16 oz) bag frozen corn
3 TB Mayonnaise
4 oz. Cotija cheese * shredded or crumbled
Juice from 2 limes
1 jalapeno pepper, seeded and chopped
1/3 cup fresh chopped cilantro
2 cloves garlic, minced
1/2 red onion, chopped
1/2 tsp chili powder, more to taste
Kosher salt
Fresh ground black pepper
*Cotija cheese can be hard to find. You can sub feta cheese if necessary
Preparation:
Heat oven to 375 degrees
Toss corn with olive oil, Kosher salt and pepper and spread on a large rimmed baking sheet. Roast in oven 15 miniutes, or until corn starts to char. Stir once during the baking time.
Meanwhile, in a large bowl, combine mayonnaise, cheese, lime juice, jalapeno, garlic, red onion, chili powder and half of cilantro.
When corn is done, fold it into the large bowl. Season with salt and pepper and sprinkle with remaining cilantro. Serve immediately.
