Chimichurri Marinade

Use this versatile marinade on steak, chicken, fish or vegetables.


Ingredients:

1/2 cup red wine vinegar or lime juice
Kosher salt
4 garlic cloves, minced
1 shallot, finely chopped
1 jalapeno pepper, seeded and chopped
1 cup fresh cilantro, minced
1/2 cup fresh parsley, minced
1/3 cup finely chopped fresh oregano
3/4 cup extra-virgin olive oil

Preparation:

Combine vinegar or lime juice with 1 teaspoon salt, garlic, shallot and jalapeno in a bowl and let stand 10 minutes.
Stir in cilantro, parsley and oregano.
Whisk in the oil.
Save 1/2 cup of the marinade to use as a sauce.
Marinate chicken or steak at least 3 hours; marinate fish and vegetables  about 1 hour.
After grilling or roasting, spoon reserved marinade over the meat or vegetables and serve.
