Easy Mustard Roasted Salmon



4 Servings

4 salmon filets, about 4-5 oz each
2 Tablespoons Dijon mustard
2 Tablespoons maple syrup OR brown sugar
Juice from 1/2 lemon

Preheat oven to 400.
In a small bowl, whisk the mustard, syrup (or brown sugar) and lemon juice.
Place salmon filets on a foil-lined baking sheet, skin side down (if filets have not been skinned).
Season the filets with salt and pepper, and place in the hot oven for 10 minutes.
Remove the filets and brush them generously with the mustard mixture.
Return the salmon to the oven and roast for 5 more minutes
