Goes great with pulled pork or pulled chicken.
Serves 6-8 as a side
1/2 head cabbage, green or red, or a mix, thinly sliced or shredded*
1 red onion, thinly sliced
2-3 carrots, shredded
Dressing:
1/4 cup cider vinegar
2/3 cup olive oil
1 teaspoon dry mustard
1 teaspoon celery seed
2 tablespoons sugar
Heat dressing ingredients in a saucepan. Bring to a boil and simmer until sugar dissolves. Pour over vegetables and toss.
* You can usually find a bag of cabbage already shredded in the produce section with the bags of pre-washed lettuce.
