Slow Cooker Whole Chicken

Easy and healthy!

1 whole chicken, 3-4 pounds
1 onion, peeled and roughly chopped
1 large carrot, peeled and roughly chopped
1 potato (optional), peeled and chopped into big pieces
1 can chicken broth
Kosher salt
Pepper
Dried thyme

Rinse the chicken and make sure there is nothing in the cavity such as the neck or gizzards.

Place the vegetables in the bottom of the slow cooker. Put the chicken on top of the vegetables and pour the broth over the chicken. Sprinkle with salt, pepper and thyme.

Set the cooker to low and cook for 8 hours.

Remove the chicken. The meat should fall easily off the bones.
