This is an easy and delicious side.
1 pound pasta: spaghetti, fettucini or linguini
2/3 cup olive oil
2/3 cup grated Parmesan cheese
Juice from 2 lemons
fresh basil, chopped
Cook the pasta according to the package directions.
While the pasta is cooking, combine the olive oil, cheese and juice in a large bowl.
When the pasta is done, move the pasta directly from the boiling water into the bowl using tongs. It's OK that some of the water will get into the bowl; this will keep the pasta moist. Season with salt and pepper and toss in the basil.
You can add almost anything you like to this recipe: chopped garlic, chopped tomatoes, sun-dried tomatoes, and sliced scallions are just a few ideas. Use whatever you have on hand, as long as you have the olive oil and lemon as your base.
