I hate cliches, but these really do melt in your mouth.
Shredded meat of one chicken (rotisserie chickens work great)
3 TB butter
1/2 cup to 3/4 cup of hot sauce (we use Cholula)
4 TB honey
2 TB white vinegar
Salt and pepper to taste
small rolls, sliced in half
optional blue cheese spread:
1/2 cup sour cream
1/4 cup crumbled blue cheese
1 TB vinegar
3 chopped green onions (see below)
Melt the butter in a saucepan over low heat. Add honey, vinegar and hot sauce. Start with the minimum amount of hot sauce and add more gradually, if desired. Season with salt and pepper. When sauce is warm, add shredded chicken and heat through.
Mix all ingredients for the spread in a bowl.
Place a large spoonful of chicken on the bottom of each roll or bun. Spread blue cheese spread on the tops of the rolls (if desired) and put sandwiches together. You can wrap the sandwiches in foil and keep warm in a low oven if necessary.
These are great served with cole slaw or a green salad.
