As with the Lo Mein recipe, you can use any meat or vegetables you want. You can also use leftover white rice.
Serves about 6
1 cup rice
2 Tablespoons sesame oil
1/2 to 3/4 pound chicken, beef or pork, cut into thin strips
1 bell pepper, yellow or red
2 green onions
2 eggs, scrambled in a bowl
1 Tablespoon olive oil
2 Tablespoons soy sauce
2 shakes of crushed red pepper
1/4 teaspoon ground ginger
Cook rice according to directions and let it cool down as much as possible. You can make the rice earlier in the day or even the night before, if desired.
Heat 1 Tablespoon of the sesame oil in a large frying pan over high heat. Add the meat and cook for 4 minutes, stirring constantly. Remove.
Add pepper and onions and heat through. Add eggs and scramble them with the pepper and onions until the eggs are cooked. Remove and set aside.
Add 1 Tablespoon sesame oil plus the olive oil to the pan and dump in the cool rice. Add the soy sauce, crushed pepper and ginger, turning the rice constantly with a spatula. Return the meat and eggs to the pan and combine everything well. Serve hot.
