Make this early in the week and use the leftovers for sangs
Serves a lot
1 onion, chopped
olive oil
salt and pepper
1/4 cup Worcestershire sauce
1/2 cup chicken stock (I use Campbell's)
2 teaspoons tomato paste *(see note)
2 pounds ground turkey
3/4 cup bread crumbs
1 egg
ketchup
Heat 1 Tablespoon olive oil in a frying pan, then add the chopped onion. Season with salt and pepper and cook about 10 minutes on medium heat. The onion should be soft but not brown. Add stock, Worcestershire, tomato paste, and mix well. Set aside.
In a mixing bowl, combine the turkey, bread crumbs, egg and onion mixture with your (very clean) hands. Mix well and shape into a rectangular loaf. Place loaf on a foil-covered baking sheet and spread ketchup over the top. Bake at 350 for one to one-and-a-half hours.
*Note: you can buy a can of tomato paste but will end up throwing most of it out. If you can, buy a tube and it will pay off in the long run. The tomato paste holds the meatloaf together, so it's best not to skip it.
