Pasta Carbonara

This is a great, last minute dish, made with ingredients you usually have on hand.
Serves 4. You can cut the recipe in half if necessary.

1/2 pound bacon, cut in one inch pieces
1 pound linguini, spaghetti, angel hair or fettucini (your choice)
3 cloves garlic, minced
3 Tablespoons olive oil
2 eggs, beaten, with a splash of milk
red pepper flakes (optional)
1/2 cup grated Parmesan cheese
salt and pepper

Start a large pot of boiling water.
Cook the bacon in a frying pan and set aside. Wipe out the frying pan with a paper towel.
Cook the pasta in the boiling water according to directions. Drain the pasta but don't rinse it.
Heat the olive oil in the frying pan over low heat and saute the garlic. Shake in the red pepper flakes (if desired). Raise the heat to medium, add the pasta and bacon to the frying pan and toss it all together. Pour the egg mixture evenly over the pasta and continue tossing. Turn the heat off and add the cheese. Season with black pepper and serve.
