This recipe makes about 25-30 meatballs. You can cut the recipe in half if desired. Either way, you can freeze the meatballs you don't use for another night.
2 pounds meat* (see note)
1 cup bread crumbs
1/2 cup grated parmesan cheese
1 egg, beaten with a fork
Salt and pepper
1-2 jars pasta sauce of your choice
1 pound pasta of your choice
Preheat oven to 400 degrees. Line a baking sheet with foil, then place a rack over the foil. Spray the rack with non-stick spray.
Put all the ingredients (except pasta and sauce) in a large mixing bowl. With your very clean hands, mix all ingredients together. Roll into balls about 1 1/2 inches in diameter, about the size of golf balls,and put them on the rack.
Bake about 15 minutes, turn them over, and bake another 10 minutes
Meanwhile, put on a pot of boiling water for the pasta, and put the sauce into another pot and heat on low.
Take the meatballs out of the oven and add them to the pot of sauce.
Cook pasta according to package directions and serve with the meatballs and sauce.
*You can use all ground beef, or a mixture of ground beef, pork, veal or sausage. Just be sure at least half of your meat mix is ground beef. If you decide to use sausage, choose uncooked sausage and squeeze it out of the casings into the bowl.
