Chili

1 small or medium onion, chopped
1 pound ground beef
1 can (14 oz) diced tomatoes
1 can (16 oz) beans (kidney or pinto)
1 small can (8 oz) tomato sauce
1 bottle dark beer
chili powder
red pepper flakes
hot sauce
1 can (7 oz) chipotle peppers, optional

Heat 1 tablespoon oil over medium in large pot. Add onion and saute until soft, 7-8 minutes. Add ground beef to the pot and cook until brown. Add salt and pepper to the beef mixture. Add diced tomatoes, beans, tomato sauce and half the bottle of beer. Stir. Bring to a boil, then lower to a simmer. Add spices to suit your level of heat! Simmer 30 minutes or longer. Add the rest of the beer if necessary if the chili appears dry.
Note: You can add one can of chopped chipotle peppers to give it a good flavor. Chop the peppers and add them at the same time as the tomatoes.
