1 lb. boneless skinless chicken breast, cut into very thin strips
1 red bell pepper, rinsed and cut into 1/2 inch strips
1 yellow bell pepper, rinsed and cut into 1/2 inch strips
1 medium onion, peeled and cut into 1/2 inch strips
3/4 cup marinade (can be teriyaki, soy vay, or a soy-based salad dressing)
olive oil
Put chicken in a ziploc bag with the marinade; seal and refrigerate at least one hour.
Heat 1 tablespoon oil in a large fry pan over high heat. Add peppers and onion and saute 2-3 minutes. They should still be crispy. Remove from pan. Add one tablespoon oil to pan and add chicken and marinade. Saute until chicken is cooked through, about 6 minutes. Put vegetables back in pan and toss to combine. Add more marinade to pan if necessary (only use marinade from the bottle at this point). Serves 2-3.
