Chicken Fettuccine Alfredo

4 Servings:

1 lb. box fettuccine
1 - 1 1/2 lbs. boneless skinnless chicken breast, cut into 1 inch strips
1 can chicken broth
1 can cream of chicken soup
Parmesan Cheese
 
Cook fettuccine according to package directions. While pasta is cooking, heat 2 tbsp. oil in large frying pan. Cook chicken strips in oil, about 3-4 minutes per side, until cooked through. Remove from frying pan. Pour chicken stock into frying pan, scraping up bits from the bottom of the pan. Slowly add cream of chicken soup, stirring until smooth. Add pasta to the pan and toss, coating pasta with the soup mixture. Add chicken and toss.  Finish with parmesan cheese.
